Fried noodles

Fried noodles are a recovery dish. In fact, if when you prepare the pasta you don't eat it all, you can try this recipe to create a delicious dish with leftovers. Here I use tagliatelle al ragù which lend themselves well to this type of preparation, but you can easily experiment with any type of pasta. Tasty and with a crunchy crust, this dish will surprise you.
Ingredients:
- about a portion of previously prepared tagliatelle al ragù
- 15 grams of Parmesan
- olive oil to taste
- black pepper to taste
Preparation:

1 Grease the pan with a little olive oil and 2 fry the sage leaves for 1 minute. At this point 3 , add the previously prepared tagliatelle with meat sauce to the pan.

4 Spread the tagliatelle as wide as possible and let them fry without touching them until they begin to form a crust. 5 Meanwhile, you can grate the Parmesan and 6 distribute it over the tagliatelle before turning them.

7 Stir and turn the noodles, then spread them over the pan and let them fry like the first time. 8 Repeat this 1 or 2 times until the noodles have a nice crust but are not too dry overall. 9 At this point, plate them and, if you like, you can add a little ground black pepper.
