Saltimbocca roman style

Presentation

This is a traditional recipe from Rome. Simple, delicious and ready in minutes. Enjoying this dish will take you to a warm Roman terrace overlooking the Colosseum!

Ingredients:

  • 300 grams of veal
  • 100 grams of raw ham
  • sage as required
  • 100 grams of flour 00
  • 30 grams of butter
  • olive oil as required
  • pepper as required
  • 50 ml of white wine

1 Beat the thin veal steaks until they are about 2-3mm thick, 2 then cover each slice of meat with a layer of raw ham 3 and add a sage leaf. Secure everything with a wooden toothpick.

4 At this point, take the bowl with the flour 5 and make the flour adhere well to the underside of the slices of meat. 6 When finished, melt the butter with the olive oil in a pan.

Cooking saltimbocca alla romana

7 Put the saltimbocca in the pan and cook for a few minutes over medium heat 8 adding a little pepper. 9 When the meat has browned but not dried, add the white wine and let it evaporate.

Finishing and serving

10 When you have created a nice cream, turn off the heat and cover the pan for a minute. 11 Plate up the saltimbocca, 12 cover them with their seasoning and enjoy your meal!

Advise

  • Never turn the slices of meat, as this would alter the taste and consistency.
  • You can also prepare smaller slices skewered on a slightly longer toothpick and serve them as delicious finger food.
