Baked pork shank with potatoes is a dish rich in flavor and perfect for special occasions, it combines the tenderness of pork with the crunchiness of potatoes, all flavored with Mediterranean herbs. By following my recipe step by step, you will discover how to obtain succulent meat and golden potatoes, making your table irresistible. Get ready to surprise yourself and your guests with this delicious traditional dish.

Ingredients:

  • 1 pork shank
  • 8g salt (+ 8g granular broth)
  • 3 sprigs of rosemary
  • 10 sage leaves
  • 2 cloves of garlic
  • 800g of potatoes
  • 150ml of white wine
  • olive oil to taste
  • pepper to taste

Preparation:

Marinade

1 Spread half the salt (and half the granulated stock cube mixed) over the entire surface of the shank and massage the meat to make it penetrate. 2 Peel the potatoes and cut them into 4-5 centimeter pieces. 3 Place the shank in the center of a baking tray, place the potatoes around it, add rosemary, sage and garlic and finally distribute the rest of the salt (mixed with the granular broth). Place in a static oven at 230°C for 10 minutes.

Cooking

After 10 minutes 4 add half the white wine and cook for 90 minutes at 200°C. 5 After 30 minutes of cooking, pour in the rest of the wine and turn the shank and potatoes to obtain even browning. Repeat this last operation after another 30 minutes. After a total of 90 minutes, 6 take your succulent pork shank out of the oven and enjoy your meal.

Advise

  • Sear it first : it will help you obtain softer and tastier meat.
  • Preserve the potatoes : once cut, if you are not using the potatoes immediately, immerse them in a basin of water to prevent them from oxidising.
  • Cooking potatoes : obviously depending on the size of the potatoes the cooking time depends, if you want to use whole medium-sized potatoes you will cook them immediately with the shank, vice versa if you make smaller morsels 30/60 minutes may be enough.
