Ingredients:
- crusts of Parmigiano Reggiano or Grana Padano
Preparation:

1 Scrape the cheese rinds with a serrated knife, 2 then clean them under running water and dry them well with a cotton cloth. 3 If they are large, cut the cheese rinds into 3-4 centimeter squares.

4 Toast the parmesan pieces on the crust side over medium-high heat. 5 When they have taken on a nice colour, turn them over and let them grill for another 3 minutes. 6 When the most tender part has almost melted, turn off the heat and leave to cool.

7 Place the cheese bites on a baking tray covered with baking paper and bake for about 4 minutes at 220°C in a preheated oven. 8 When it is ready, let the morsels cool and then 9 serve them as a snack in small bowls.
Advise
- Thin the crusts well : don't leave too much cheese stuck to the crust, this will melt during cooking and ruin your morsels.
- Don't overdo it : these morsels are delicious and one leads to another, but be careful not to eat too many because they are as nutritious as they are good.
- The microwave : an even faster method is to use the microwave oven, just carefully clean the rinds of excess cheese and cook them at 700W for about 2 minutes.
