Spaghetti with garlic, oil and chilli pepper

Have you ever wanted to prepare an authentic Italian dish, simple but full of flavor? Today I will guide you in the creation of spaghetti aglio, olio e peperoncino, a recipe that embodies the true essence of Italian cuisine: a few quality ingredients, combined to perfection. With only garlic, extra virgin olive oil, chili pepper and spaghetti, you can bring to the table a tasty and irresistible dish. Ingredients:
- 200 grams of spaghetti
- 2 cloves of garlic
- 2 chilli peppers
- 50 grams of olive oil
- coarse salt to taste
- parsley to taste
Preparation:

Peel the garlic cloves, cut them in half lengthwise and remove the central core; 1 then cut them crosswise into thin slices. Then remove the end part of the chillies, cut them in half lengthwise and scrape out the seeds; 2 then cut them into thin strips, again lengthwise. Finally 3 roughly chop a little parsley.

4 Fry the oil, garlic and chilli pepper in a pan over medium heat. Meanwhile 5 cook the spaghetti in salted water. 6 Fry the sauce until the garlic begins to turn golden.

When there are 3-4 minutes left to cook the spaghetti 7 transfer them to the pan adding 1 ladle of cooking water. Finish cooking in the pan turning the spaghetti every now and then, 8 when there is little liquid left on the bottom of the pan and the spaghetti is cooked add a little parsley and mix them. Finally plate the spaghetti 9 adding a little sauce from the pan, give a final touch by sprinkling a little more chopped parsley and enjoy!.

- Pan-Frying : Finishing cooking spaghetti in a pan with a little cooking water is definitely one of the secrets to a perfect result.
- Be generous : for a good pasta aglio olio e peperoncino you mustn't be afraid to be generous, especially the right amount of olive oil is essential.
- Infinite variations : this recipe is the classic one, but you can vary the proportions of garlic and chilli according to your taste or perhaps add an ingredient that enriches the dish such as Parmesan.
- Be careful with the chili pepper : be careful not to touch your eyes or nose after you prepare the chili pepper, I assure you it is not very pleasant.
