Romagna watercress

Presentation

Recipe with few simple ingredients and quick to prepare, without the need for leavening. You can stuff them with whatever you want, for example mushrooms and spinach for a tasty vegan dish or ham and cheese for a more delicious version. Ideal as street food or a delicious snack, we are sure that if you try them you will surely find the right occasion to taste them again.

Ingredients:

  • 250g of wheat flour 00
  • 35g of olive oil
  • 4g of salt
  • 2g bicarbonate
  • 140ml of milk
  • 100g of cheese (whatever you want)
  • 80g of ham (whatever you want)
  • 100g of spinach
  • 100g of mushrooms ( the ones you want)
  • water as needed

Preparation:

Dough

1 Put the flour, olive oil, salt and baking soda in a bowl and mix with a spoon. 2 Add half the milk and mix all the ingredients, then add the rest of the milk and mix until the dough is soft but not sticky and comes away from the sides of the bowl. 3 At this point, work the dough on a surface for a few minutes.

Spreading the dough

4 Then roll the dough into a ball and let it rest covered by the bowl while you prepare the filling (if the filling is already ready, go straight to step 5). 5 Cut the dough into 4 equal parts and roll each portion into a ball with your hands. 6 Roll out each ball of dough with a rolling pin until you obtain a disc about 2 mm thick.

Stuffing

7 Stuff half the disc with the ingredients of your choice (spinach, mushrooms, cheese, ham, ...), and 8 brush the edge with water so that when we close the watercress, the edges will seal perfectly. 9 Fold the disc of dough over to form a half-moon and close it tightly by pressing the edges with your fingers, also letting all the air out.

Baking

10 Further seal the edges of the watercress by squashing them with the tines of a fork and trim the edge if necessary with a pizza wheel. 11 At this point, lightly grease a non-stick pan with olive oil and cook the watercress on both sides over medium heat. 12 At the end stand them up on the fold for about 1 minute so that they cook there too and eat them while still hot.

Advise

  • To roll out and give the right shape to the disc of dough you can also help yourself with your hands.
  • You can also try a sweet version, perhaps with Nutella.
